Even though Paula and Mark Hylland are experienced bar owners — they own three others in Portland — taking over the former Stanich’s restaurant location to open The Mule Bar on NE Fremont Street presented some new challenges.
While the other bars were established and had a stable staff when they were purchased, the Fremont location did not, as it had been closed for a significant time. Putting in eight months of remodeling effort, much done by Mark using his carpentry skills, they kept some of the site’s traditional vibe while incorporating their fresh view of a neighborhood bar.
Mark showed me the working fireplace and new seating area as an example of this personal touch. The Hyllands are also in the process of adding a small Oregon Lotto gaming area, as well as seeking official status as a San Francisco Forty Niners Bar, a nod to Paula’s allegiances.
The couple built their food menu — including burgers, fries, fish sandwiches, salads, chicken wings, and more — around Stanich’s long-famous reputation as “the place” for a great hamburger.
“So, when the business first opened in February, it was a bit crazy,” Mark said, as the swell of customer curiosity and Stanich’s legacy somewhat overmatched their kitchen capacity, challenging the staff to maintain consistent and acceptable service levels.
Paula and Mark have since adjusted and rebalanced their energies, focusing on servicing the front seating area; they only use the large back area for special events. They openly offer the back area to community groups; the monthly cribbage club, for example, is a group taking advantage of this neighborhood space.
Paula and Mark are driven to have the Mule Bar provide a comfortable and welcoming gathering spot. “We continually strive to listen to our customers,” said Paula, “to get a sense of what that means to local residents.”
