Grandpa's Oatmeal Cookies

My grandfather was a big fan of dessert, and these cookies were his favorite lunchtime dessert. Not dinner dessert, mind you. Dinner desssert was always ice cream. When he was still alive, he made these cookies at least once a month so that any time I visited, I could always find a cookie jar full of them. The recipe is very simple, I’m not sure why they are so good —maybe it’s the shortening, or maybe it’s the memory. They are light and crispy and will never go stale (if they last that long). Enjoy!

Here’s the recipe:

  • 1 cup shortening (I use ½ cup shortening + ½ cup butter instead)
  • 1 cup white sugar
  • 1 cup brown sugar
  • 2 eggs
  • 2 cups flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 2 cups quick oats
  • 1 cup raisins
  • ½ cup nuts (I prefer pecans)

Directions

  1. In a large bowl, cream together shortening/butter, white sugar, and brown sugar until smooth. Beat in the eggs until fluffy.
  2. In a separate bowl, stir together flour, baking soda, baking powder, and salt. Gradually beat into shortening mixture.
  3. Stir in oats, raisins and nuts.
  4. Drop by teaspoonfuls onto ungreased cookie sheets.
  5. Bake at 350 degrees for 10-12 minutes. Makes about 4 dozen cookies, depending on size.
